Want a yogurt with a wonderful tangy flavor? Unlike our ABY3 and Yo-Mix 2651, ABY611 produces a slightly tangy flavor with full body as well. Make your own yogurt at home using Yo-Mix ABY611 culture. This culture produces a wonderful yogurt product. Can be used with nut milks. Available in two smaller size for hobbyist use and a 750 dcu bottle for commercial use. (YO-MIX® ABY-611) yogurt culture produces a probiotic yogurt with traditional full yogurt flavor (slightly tart) and medium body. Slight post acidification. You can re-culture this yogurt as well using a 9 to 1 ratio of milk to yogurt. This culture has a 6-7 hour set time at 107ºF when used in pasteurized cow milk. Set times will be somewhat longer in unpasteurized and/or goat milk. Kosher Circle K Dairy.
 
Available in two sizes that are used with 50 or 100 gallons of milk.
Small: can be used for 1/2 gal. to  50 gal. of milk.
Large: can be used for up to 100 gal. of milk.
 
Usage rate:
Industry: 20 DCU for 26.5 gal. (100 liters) of milk. 
Hobbyist: 1/16 tsp for 1/2 gallon milk, 1/8 tsp for 1-2 gallon milk, 1/4 tsp for 3-5 gallons of milk.

  • Streptococcus thermophilus
  • Lactobacillus delbrueckii subsp. bulgaricus 
  • Lactobacillus acidophilus
  • Bifidobacterium lactis

Heat your milk to 180-185f (82-85c), then cool to inoculation temperature. Usually your yogurt will taste nominal in 4-8 hours. To make real Greek Yogurt, strain the yogurt through a fine mesh food grade nylon bag. Recommended incubation temperature: 35 - 45°C (95-113°F).

    I have made 3 batches, using half gallon, whole milk, each batch was consistent batch to batch. Everyone who has tried this yogurt love the flavor and the nice "tang". I also purchased the drain bag, I love the bag.

    Was looking for something with a bit more tartness than the ABY3 I've been using. First batch of this 611 was a bit more to my liking but WOW was the re-culture tart! Goes great with fresh fruit. Just what I was looking for.
