About This Product

Make your own Greek Style yogurt at home using Yo-Mix 2651 culture. This special yogurt culture contains an extra bacteria strain, Bifidobacterium lactis Lactobacillus casei, which adds to its high quality probiotic quality.
This culture produces a wonderful yogurt product. Can be used with nut milks. Available in two smaller size for hobbyist use and a 750 dcu bottle for commercial use.
 
Available in three sizes :  20 Batch Envelope;  50 gallon bottle or 100 gallon bottle
Envelope:  Makes 20 batches of 1/2 Gallon each
Size 1: small bottle: Can be used with 50 gal milk. 
Size 2: large bottle: Can be used with 100 gal milk.
 
 
Usage rate:
Industry:10-20 DCU for 26.5 (100 liters) of milk. 
Hobbyist: 1/16 tsp for 1/2 gallon milk, 1/8 tsp for 1-2 gallons milk, 1/4 tsp for 3-5 gallons of milk.

Heat your milk to 180-185f (82-85c), then cool to inoculation temperature. Usually your yogurt will taste nominal in 4-8 hours.

    Bought this Greek yogurt culture based on the positive reviews, after hit or miss results using store-bought yogurt as culture. Some of my results with store-bough yogurt cultures were great, but some never “took”, some turned into cream cheese, some turned into ricotta. Even the best yogurts I made using yogurt as culture released so much whey when I strained them that I struggled finding uses for all the whey. So I researched and bought this Greek yogurt culture. I just made my fourth perfect batch using this Greek culture. The yogurt is thick, has a great flavor, and nets more finished yogurt and less whey than when I’ve used store-bought yogurt as culture. Just 1/8 tsp of this product cultures a gallon of milk, and the results are consistently perfect. I also bought the straining bag, which is a hundred times better than anything else I’ve tried to strain yogurt, and the vanilla beans, which are delicious. Five stars all the way around.

    I followed the directions included with the YoMix starter exactly while using my instapot and got a wonderfully creamy, thick, delicious yogurt. Far better than when I used to make it using store bought greek yogurt as a starter. I'll be making this every week from now on.
