A few tips:  Press the curds in the mould or press hoop for an hour or until the cheese can be taken from the mould/hoop without falling apart. Then, dress with cheese cloth.  I like to cut the cloth in a circular shape to fit slightly over the top and bottom of any round cheese.  This method eliminates creases in your cheese.   After using, I clean the cloth and sanitize in cold water using Star San non-rinse sanitizerDepending on your washing method, you may notice some minor shrinkage in the length of the unbleached cloth.

 


Grade 60 Cheese Cloth : 60 threads per inch (2.54cm)
Use this cloth to bandage and/or drain your large curd cheeses and lining your mould and press.. Rinse after using in cold water and reuse.

Excellent 'all around' cheese cloth thread count.

 

Grade 90 Cheese Cloth: 90 threads per inch (2.54cm).

Use this more fine mesh cheesecloth for draining soft cheeses like ricotta and other fresh cheeses. Rinse after using in cold water and reuse.

Note: Grade 90 is higher in cost than other thread counts.

    I use both the 90 and the 50 for cheese making. I use the 90 for lining molds, hanging chèvre, and draining ricotta. I use the 50 for bandaging cheeses for aging. I have used PlyBan II in the past, and it would eventually rip at the most inopportune time. This cloth lasts and lasts. Note from Steve/TheCheeseMaker: Great to hear about our cheesecloths. PlyBan II does have it use for bandaging as it is anti-microbial and anti-mold.

    i got this for my Apple cider vinegar . it works i also raise mealy worms for my chickens and use this to stop them from escaping trust me If a Mealy worm cant get out Bugs cant get in. Thanks Guys will be ordering again .

    I don't really know why anyone ever uses anything but the maximum thread count available. It is good for making hard cheese, cream cheese, and anything in between. Not to mention it holds up much better after repeated uses. Just use the 90 thread count for everything people.
