ORGANIC MICROBIAL VEGETARIAN RENNET

This Vegan friendly Organic Microbial Liquid Rennet is an excellent option for making vegetarian-friendly cheeses, especially, soft cheeses. The enzymes in this microbial rennet are derived from sodium chloride and Mucor miehei, a fungus that helps mitigate the fermentation and development of cheese from milk. As such, it is completely vegetarian (as opposed to traditional rennet that is extracted from animal enzymes) and helps make a delectable selection of fresh and creamy cheeses.
To use this double strength rennet, simply add 1.2 ml or a 1/4 teaspoon to 2 gallons (7.5mil) of milk. The active enzymes in the rennet will help curdle and solidify the milk, an important step in the cheesemaking process. Vegetarian rennet is best used for soft cheeses as it won’t give the same effect that’s needed to make hard cheeses such as parmesan or gorgonzola. The Organic Microbial Liquid Rennet is perfect for goat cheeses, camembert, and even softer cheddars or blue cheese varieties.

Hobbyist Usage:
1/4 tsp. (1.2 ml) for 1-2 gallons of milk
1/2 tsp for 2-6 gallons of milk
Industry Useage Rate: 0.75 - 1.0 oz. (22-29 mls)/ 1000 lbs. milk.
This rennet is acceptable for the production of vegetarian cheeses. Vegan friendly.
