LyoPro MD : Mesophilic Starter Series MD (from Italy)
LyoPro MD is a blended mesophilic culture preferred for soft ripened and fresh (unripened) cheeses. Similar to 101 type Mesophilic Direct Set starter cultures.
Application: Chèvre, Cream cheese, Gouda, Edam, Havarti, Cottage cheese, Quark, Fromage Blanc; and as a Mesophilic Starter for Camembert, Brie and Blue Cheeses
A mesophilic starter culture is effective at lower temperatures (room temp - mid 80'sF)
LYOPRO MD is an excellent alternative for those wanting Danisco's BT 02 culture.
Available in 50 CXU packets.
- 50 CXU will innoculate 132 gallons of milk
When using this culture at home a little goes a long way:
Use 1/8 tsp. per 1 gallon(3.7liters), 1/4 tsp. per 2-5 gallons(7.5-18.9 liters) 1/2 tsp. per 5-10 gallons(18.9-38 liters).

Description: A blend of homofermentative and heterofermentative mesophilic strains; the presence of Lactococcus lactis subsp. lactis biovar diacetylactis allows cheeses to obtain a more noticeable aromatic profile. In semi-hard and hard cheeses it produces small eyes. It is used in the production of fresh, soft cheeses, and semi-hard cheeses.
