LyoPro ALPINE  is a Thermophilic Starter culture blended with Mesophilic cultures;  use for Hard and Very Hard cheeses!

50 CXU Packet for 126 gallons of milk

And with the addition of Lactococcus lactis biovar diacetylactis;  small eyes will be formed in the finished products.

Hobbyist usage rate: use approximately 1/8 tsp. for 1-3 gal.(3.78l-19l) of substrate.  50 CXU packet will innoculate 126 gallons Milk.

Description: A blend of homofermentative and heterofermentative cultures that shows good fermentation performance, aromatic abilities and medium proteolytic activity.

Due to the addition of Lactococcus lactis biovar. diacetylactis small eyes are formulated in the finished products.

    I'm new to cheesemaking, and I bought this to make a "Yesterdaze" cheese (a cheese that gives somewhat of a short aged flavor but can be eaten after two days). This specific culture was recommended and it has worked great for the cheeses I've made so far. Really fast shipping too!
