KADOVA MOULD are SPECIAL ORDER; approx 2 week lead time
Kadova hard cheese moulds eliminate the need to use cheese cloth. These moulds are prized by professional cheese makers who want a uniform cheese with curved sides.
Made of very heavy duty food grade plastic. There are four parts to these moulds; mould, mould screen(liner), lid and lid screen(liner).
When cleaning the screen(liner) temperature should not exceed 131f (55c).
Two popular sizes; (and their corresponding cheese weight*):
1 kg(2.2 lbs) and
K4040 External Dimensions: 6.75" diameter (171 mm) x 3.5" Height (89 mm)
1.5kg(3.3 lbs.) to 2 kg(4.4 lbs.).
K4060 External Dimensions: 8.5" diameter (215 mm) x 6.5" Height (165 mm)

- Using the mold:
- Line with mesh: Place the mesh liner inside the mold body.
- Add curd: Carefully put your cheese curd into the mold.
- Apply pressure: Use a cheese press to apply even pressure to the mold to shape the cheese.
- Cleaning procedure:
- Disassemble: Take apart the mould, separating the mold body, the mesh liner, and the lid.
- Soak: Immerse each part in a food-safe cleaning solution. (we do not recommend an acid based cleaner for the mesh liner- use a diluted detergent)
- Temperature control: Maintain the cleaning water temperature below 130°F (55C) for the mesh liner and below 175F (80°C) for the mold and lid.
- Rinse thoroughly: Rinse all parts thoroughly with clean water; can scrub mesh liner with a soft bristle brush as well if needed
- Important considerations:
- Do not use a dishwasher: Always hand wash Kadova molds.
- Do not use an acid wash on mesh (even if no rinse food approved such as Star San)
