Mesophilic Cultures are cultures that are active on the lower temp ranges - from around 70F - 88F.
Many Fresh Cheeses or cheeses that do not age for a very long time are made using a 'Mesophilic Starter', and
they are often identified in certain recipes.
We offer Mesophilic Starter cultures from Danisco, theMilkman, LyoPro, CHR Hansen and Biena.
Some cultures are also a blend of Mesophilic / Thermophilic bacteria.
